BORGO ANTICO Nisà DOCG Sparkling Prosecco 0,75 l
The grapes are hand-harvested and gently pressed. The must is cold clarified, and fermentation begins at 16 °C using selected yeasts. After fermentation, 2–3 rackings are carried out to remove the coarser lees, then the wine is aged on fine lees in cement tanks, which enhances its structure and reduces the use of sulfur dioxide.
Secondary fermentation takes place in autoclaves using the Martinotti–Charmat method. Filtration and bottling are carried out at a pressure of 2.5 atmospheres.
Aging
1–2 months in autoclaves, followed by bottle aging.
