"Col Fondo" (short for "con il fondo", meaning "with the sediment") is Valdobbiadene Prosecco's most historical method: the base wine is bottled with a small addition of sugar and yeast, which triggers a natural secondary fermentation in the bottle. The yeast sediment — the "fondo" — remains at the bottom, enriching the aromas and making the wine bready, mineral, and more complex over time.
Terra di Guia Col Fondo has precise technical data: 0 g/l residual sugar, 11% alcohol, 5.5–5.8 g/l total acidity, pH 3.18–3.20. Made from hand-harvested Guia grapes from the second half of September. The nose is dominated by yeast and bread crust, with wild sage and Golden apple notes; the palate is soft and fresh. When serving, tilt the bottle slowly, leaving the sediment at the bottom. Serve at 7–8°C — excellent as an aperitif, with antipasti, light starters, shellfish, and seafood.
