Riva Granda produces this wine from its own "Riva Granda" vineyard in Col San Martino — a steep hillside at 269 metres, with south-east and south-west exposure, clay-limestone conglomerate soil, and natural ventilation from the nearby Alps that concentrate intense aromatic potential in the grapes.

With just 1 g/l of residual sugar, the 0.00 is about as bone-dry as Prosecco gets — the name says it all. The nose is broad and intense: yellow apple, peach, wisteria, and acacia blossom at full volume. On the palate it is sharp, savoury, and mineral with a long, clean finish. Refined persistent perlage from autoclave fermentation and cold stabilisation. Perfect with raw fish, shellfish, sushi, or savory dishes — equally impressive on its own as a meditative sipping wine.
